Everyone’s second favorite holiday is fast approaching!!! Thanksgiving!!!
This is the first year I won’t be spending this holiday with my family. 😦
But instead I’ll be celebrating with my second family in the San Juan Islands! Can’t get much better than that!

Tonight I was reminiscing about past Thanksgivings, and why they’re so special to me. I grew up in a big family, a big, LOUD family. And I know everyone says their family is loud, but my family is overwhelmingly loud. We all want to be heard, and when someone interrupts us, we just talk louder in order to get our point across. Most of the time I just sit back and watch. It’s pretty entertaining! Plus then you can document stuff like this:kate kellogg the last hoorah


Everyone in my family is all very close. Everyone is always, truly happy to see you. And all of my best friends are my cousins, who happen to be mostly girls, and all around my age! I am very, very blessed. I was thinking about the time that my cousin Haley and I helped my Grandma prepare Thanksgiving a couple years ago. We were following a recipe from Bon Appétit that called for leeks. This day was comical because both my cousin and I had NO idea what a leek was. My Grandma wouldn’t tell us, and soIi sneakily looked it up on my iPhone. They look like green onions, so give me a break!
The recipe was for Pear, Leek and Gruyére Turnovers.
Now that may sound repulsive, especially when you only know what a pear is (reminder: years ago). But they’re freaking amazing!! So delicious!! I can promise you the appetizer was gone in minutes. Well, mostly because of my cousin and I eating them all.

This was right before they went into the oven. Yummy!!

The recipe is simple, and as follows:


  • 2 tablespoons (1/4 stick) butter
  • 1 1/2 cups chopped leeks
  • 1 6- to 7-ounce firm but ripe pear, peeled, cored, chopped
  • 1 1/2 teaspoons sugar
  • 3/4 cups (packed) grated Gruyère cheese (about 3 ounces)
  • 1 1/2 tablespoons chopped fresh chives
  • 1 17.3-ounce package frozen puff pastry (2 sheets), thawed
  • 1 egg, beaten to blend (for glaze)


  • Melt butter in heavy large skillet over medium heat. Add leeks; stir 1 minute. Reduce heat to low; cover and cook until leeks begin to brown, stirring occasionally, about 7 minutes. Stir in pear and sugar. Increase heat to medium; sauté uncovered until any liquid evaporates, about 2 minutes. Season with salt and pepper. Transfer to bowl; cool. Stir in cheese and chives.
  • Place puff pastry sheets on work surface. Using 4 1/2-inch-diameter tartlet-pan rim or bowl as aid, cut out 4 rounds from each pastry sheet. Roll out each pastry round to 5-inch circle. Place leek mixture on half of each pastry round, dividing equally. Brush pastry edges with egg glaze. Fold pastry over filling, pressing to adhere. Press edges with fork to seal. Brush turnovers with egg glaze. Pierce pastry in several places with toothpick. Place on baking sheet. Chill 20 minutes.
  • Preheat oven to 400°F. Bake turnovers until puffed and golden, about 18 minutes. Serve warm.

Thoughts to begin your week….

The internet isn’t all bad! Being a student majoring in Communications, it’s hard to believe all the stories you hear on the Internet. Or be thrilled with what you see. For example, yesterday my WSU cougar football team played the University of Arizona’s wildcats. The sports editor of the Arizona Daily Wildcat newspaper, wrote and posted a very condescending and arrogant article about how much we suck…And then we beat them 24-17!! HA!! Honestly I’m surprised they published this article. Even though it is a student newspaper, you would think they would still strive to be professional.

So besides the bad, I do very much appreciate the good content that can be found on the Internet. For example, the many creative and inspiring blogs and DIY websites!!

So find a comfy spot to sit, grab a blanket and maybe some tea, and get ready for some thought-provoking articles, photographs and art.

This weekend I was Stumbling and came across this AMAZING artist. I made this picture by Daniel Lieske my computer background.


Please click and explore! This piece screams childhood adventure and it brought back so many memories for me. There are so many aspects of this piece that you won’t notice for some time. This artist is incredible and has so many more pieces, and he shows you different creation techniques and drawings for each piece.

Our lives have become so busy, especially with the evolution of technology. Humans are so focused on time, being productive, and have little attention spans nowadays. This next post by Brianna West from the Thought Catalog, gives a lot of great points, on activities that we should start making time for again.
A couple of my favorites include #5: Getting really dressed up for no other reason than just wanting to. Growing up my mother always said never pass up an opportunity to look you best! I think she told me this partially because I dressed in sweat pants for three consecutive years of my teenage existence. But now, I’ll even dress up for an exam. Because it’s important to walk into that classroom with confidence! Plus you have to feel good about something, even if it isn’t the exam!
#8: Disconnecting from technology frequently enough that we won’t be anxious and feeling like we’re missing something when we try to do so for an extended period of time. I think this one is incredibly important, because I have gotten into the habit of checking all my social media when I wake up, and before I go to bed. Or when I have nothing else to do. Whether you taking the bus, walking downtown, or are in a populated area, check to see how many people are on their phones. It’s a bit depressing.
#17: Planning something, especially with someone else, as simple as dinner or as grandiose as a long vacation next year. You always need something to look forward to. I believe it! Sometimes it helps make the time go faster when you need it to, but also gives you the opportunity to focus on your relationship with this person, and/or yourself. These things are very important.

Ever since the beginning I can remember being in love with nature and it’s beauty. From a simple sprout, to the great redwood forest!

While writing my last post about hanging all my pictures, I reminisced about one picture, my family visit to Crater Lake.

The water was that blue, I swear! One of the most beautiful places I have ever visited. And I want to go back and hike all the trails. I heard a rumor that you have to book a room in the lodge a year in advanced…
This picture was our family Christmas photo for that year.

Since this visit and a few others before, like visiting the redwoods, I want to travel to other famous National Parks. I have ALWAYS wanted to go to Yellowstone. And it’s really not that far! I also really want to visit the Grand Tetons. The photographer inside of me is screaming at me to get in the car and go!! I have been to Glacier National Park, but it was during that awkward stage when you can tell it had snowed, but the snow was all melted and everything was dead. and it was foggy. So I’d love to go back!

My Fall Essentials

This is the first time I have listened to Christmas music before Thanksgiving. But it’s ok! The snow told me I could. Last week we got at least an inch of snow within an hour of me getting home from my weekend away. It was beautiful!

My number one Fall essential, is a cozy long cardigan like this one, from American Eagle Outfitters.

Why she’s wearing shorts with it, when it’s fall, I don’t know…But I like the sweater!! I actually got my cream sweater cardigan from Fred Meyer.

My number 2 fall essential are boots! I would wear them everyday of the year if I could. These boots are probably my go-to for those cold rainy days. But i really want a pair of THESE!!

I’m not sure if they’d look good on my short legs, they might make me look shorter. But I’ve wanted them for forever!

Now all I need is some dangle earrings and a spritz of my favorite fall perfume, Irresistible Apple by Bath and Body Works. Which, unfortunately, they no longer make. So I’m saving every last drop!
